Rudy’s X Poretti Competition

Last month, 10 of our talented pizzaioli came to the Rudy’s Academy to take part in a cook off for our Rudy’s X Poretti Specials Competition.

Our judging panel tasted some fantastic special pizzas created by our pizzaioli, before crowning our winner, Francesco.

Introducing the Trapanese…

Created by Francesco, our Head Pizzaiolo at Rudy’s Castle Street.

Francesco’s special pizza is inspired by his home neighbourhood; Trapani, Sicily.

Francesco uses a base of pesto Trapanese originating from the province of Trapani in Sicily. He then tops the base with fennel sausage and Sicilian ricotta.
