At Rudy’s, we’re always inspired by famous pizzaioli and pizzerias across the world. This month we have borrowed a pizza from Anthony, the legendary founder of Una Pizza Napoletana in New York’s Lower East Side.
Recognised as a pioneer of Neapolitan-style pizza in the United States, Anthony’s dedication to his craft has made Una Pizza Napoletana the #1 pizzeria in the world according to Top 50 Pizza in both 2022 and 2024.
His obsession with pizza started young, he’s been making dough every day of his life since he was 15. Even after 27 years in the business, he still personally makes every single dough ball. His commitment to tradition runs deep, from using his grandmother’s spoon to spread the tomato base to carefully baking just three pizzas at a time in his wood-fired oven. This hands-on approach, combined with his focus on every detail, has cemented his reputation as one of the greatest pizzaioli of all time.

Taking inspiration, we’ve borrowed one of Anthony’s most popular specials and given it a Rudy’s twist. While staying true to the essence of his creation, we’ve swapped out bufala for smoked cheese, adding a new depth of flavour while maintaining the integrity of the original pizza.
FENNEL SAUSAGE + FRIARIELLI // San Marzano tomato, for di latte + scamorza, topped with fennel sausage, friarielli, Kalamata olives + fresh chilli. Finished with Pecorino shavings.
